These tasty Skittles sugar cookies are colorful and tasty and give a burst of flavor in each bite of the light sugar cookie base. They are a great choice to include on any party dessert table.

Ever since I can remember, my daughter Jess has loved Skittles candy. It has always been a present from Santa, right to this day!

I recently got a big bunch of the candy to make a Superbowl cheese ball and also to send in a care package for Valentine’s day.

The cookies are a bit of a challenge, as I discovered. Skittles and ovens are not made for each other, so the end result is different than I had imagined, but different in a really tasty way.

I’ve made a Skittles fan of my husband, too, it seems, with my latest home made sweet treat.

These Skittles sugar cookies are a colorful treat that is perfect for an afternoon snack.

The challenge comes from the fact that the outside of a Skittles candy is very hard and gets chewy when cooked. It also bursts, but that is a PLUS for this cookie.

It gives it a sort of “maraschino cherry” look to the cookie and also gives the cookie a burst of fruity flavor in each bite.

Add to that the fact the the inside of the skittles sort of leaks out and goes to the bottom of the cookie and you get an interesting combination of chewy, and crunchy and drippy goodness.

(Leave it to a made food blogger lady to put a spin on a sort of baking mistake! LOL….but I tell the truth here, these really are good!)

I used my basic sugar cookie recipe as the base of this sweet treat. I make a huge batch of it and divide it into logs and freeze it. I had a left over log in the freezer from Christmas and I just let it defrosts.

The dough is made into round, fairly large 1 1/2 – 2 inch sized balls. It’s a good idea to use a silicone baking mat or parchment paper for ease of clean up, since the Skittles burst during cooking.

I also add a couple of extra Skittles to the top of the balls and into the oven they go.

You will want to bake them for about 18-20 minutes. Don’t bake them too long or the cookie will be extra hard and you already have the crunchiness from the Skittles so you don’t need any extra. Skittles Sugar Cookies - A Rainbow Delight - Recipes Just 4U (5)

Also, remove to a cookie sheet right away, when you take them out of the oven, so they do not cook any longer on the bottom.

These rainbow Skittles sugar cookies have a burst of tart, fresh flavor in every bite. They are easy to make and the kids will love to help.

Ingredients

  • 1/3 cups of unsalted butter at room temperature
  • 1 egg
  • 1/2 tsp pure vanilla extract
  • 1/2 cups of granulated sugar
  • 1 1/4 cups of all purpose flour
  • 1/2 tsp baking powder
  • 1/4- tsp salt
  • 1/3 cup of Skittles candy plus extra to decorate
  • 1/4 cup of granulated sugar

Instructions

  • Preheat the oven to 350 º F.
  • Whisk together the flour, baking powder and salt in a large bowl and set aside.
  • In the bowl of a stand mixer, cream together the butter and sugar. Mix in the egg and add the vanilla extract. Add the dry ingredients and mix well until a stiff dough forms.
  • Mix in 1/3 cup of Skittles candy. Place the dough in the fridge for an hour.
  • Take large spoonfuls of the dough and roll it into good sized balls (about 1 1/2 -2 inches. Roll the balls in granulated sugar. Add a few extra Skittles to the top of each cookie to decorate.
  • Place the balls on a baking sheet lined with a silicone mat. Bake in the preheated oven for 18-20 minutes, until lightly browned.
  • Remove with a rubber spatula to a wire rack and let cool.
  • Makes 15 cookies. The cookies are best enjoyed right away, or they go kind of hard. Just pop them in the microwave for about 30 seconds if this happens.
