paal poli recipe | milk poli recipe | paal poori recipe with step by step photo and video recipe. there are hundreds and thousands of indian dessert recipes made with milk. most of them are generally made with curdled milk or chenna which is later dipped in sugar water or evaporated milk. one such our own south indian favourite milk based dessert recipe is paal poli recipe with poori and sweetened milk.
in this recipe, i have shown 2 ways to make deeply fried poori which is later used to dip in the evaporated milk. basically, the first one is the old school or traditional approach with poori’s disc made with rolling pin. and i guess most of them would end up anyway with this approach. but i have also shared another option with rotimatic. in other words, rotimatic has an option to roll out hot and round poori’s discs which can also be used for the same purpose. i personally liked the rotimatic option as it less hassle and easy to make without kneading and rolling. but it is completely up to you and whatever you are comfortable with it.
furthermore, i would like to highlight some tips and suggestions while making paal poli recipe. firstly, in this recipe, i have used wheat flour to make the poori disc to make it healthy. but this can also be made with maida or plain flour to make the poori disc too. secondly, the sweetened milk can also be made with condensed milk or evaporated milk too. i have shared the lengthy version of evaporating milk and then adding sugar. this can be easily skipped with sweetened condensed milk. finally, once the poori’s are deep fried, do not dip it immediately in evaporated milk. let it cool down for 3-4 minutes and pat dry them in tissue paper.

Ingredients
for poori (poli):
- 2 cup wheat flour / atta
- 2 tbsp rava / semolina / suji, fine
- water to knead
- oil for frying
for flavoured milk (paal):
- 3 cup milk
- ¼ tsp saffron / kesar
- ¼ cup sugar
- ¼ tsp cardamom powder / elachi powder
- 2 tbsp almonds / badam, chopped
Instructions
firstly, in a large kadai heat3 cup milk with¼ tsp saffron.
stir and boil the milk well.
boil until the milk thickens slightly.
further add¼ cup sugar and stir well.
continue to boil until the milk thickens well.
additionally, add¼ tsp cardamom powder and stir well.
take the prepared poori and fold triangle.
dip the folded poori into warm milk both the sides.
allow to soak for at least 10 minutes or until the poori absorbs the milk and turns to soft poli.
finally, enjoy paal poli by garnishing with chopped almonds.

how to make milk poli with step by step photo:
poori preparation:
- firstly, in a large mixing bowl take2 cup wheat flour and2 tbsp rava.
- add water as required and knead the dough.
- knead to smooth and stiff dough.
- now pinch a small ball sized dough and prepare disk.
- deep fry in hot oil.
- press gently with the spoon to puff up.
- once they puff, it will automatically turn over. if not, once the bottom side is golden brown, turn over the poori.
- and fry the puritill golden brown all over. also drain the poori into tissue paper to remove excess oil. keep aside.
paal preparation:
- firstly, in a large kadai heat3 cup milk with¼ tsp saffron.
- stir and boil the milk well.
- boil until the milk thickens slightly.
- further add¼ cup sugar and stir well.
- continue to boil until the milk thickens well.
- additionally, add¼ tsp cardamom powder and stir well.
paal poli preparation:
- take the prepared poori and fold triangle.
- dip the folded poori into warm milk both the sides.
- allow to soak for atleast 10 minutes or until the poori absorbs the milk and turns to soft poli.
- finally, enjoy paal poli by garnishing with chopped almonds.
poori preparation using rotimatic:
- firstly, take 3 cup wheat flour and one-third cup suji into a flour container.
- also add water and oil into respective jars.
- start preparing poori by keeping thickness – 1, roast – 1 and oil -2.
- deep fry the poori and prepare milk poli as shown above.
notes:
- firstly, do not over soak the poori else the poli will turn mushy.
- also, adjust the thickens of flavoured milk to your choice.
- additionally, you can serve with coconut milk for variation.
- finally, paal poli recipe tastes great when poori is prepared with maida or rava.
