well many would have a confusion about this recipe and the yoghurt or dahi based stuffing for this recipe. as a matter of fact, even i had this confusion when i initially heard about dahi ke parathe. to clear all the confusion, the yoghurt is basically added directly to the dough with other dry spices. very similar to flavoured roti or even thepla’s were spice mix is directly added to the dough and is later rolled to thin bread. similarly, the dahi paratha recipe, follows the same convention, yet with addition of curd, it has a significant impact on the final roti. it makes it flakier, lite and also soft. hence you may consume more paratha’s as compared to any traditional filling paratha’s.

Ingredients

  • 2 cup wheat flour
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • ¼ tsp cumin powder
  • ½ tsp garam masala
  • ¼ tsp ajwain / carom seeds
  • 1 tsp kasuri methi
  • 1 tsp ginger paste
  • 2 tbsp coriander, chopped
  • 2 tbsp mint / pudina, chopped
  • ½ tsp salt
  • 2 tbsp oil
  • 1 cup curd / yogurt

Instructions

  • firstly, in a large bowl take 2 cup wheat flour.

  • add ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp cumin powder and ½ tsp garam masala.

  • also, add ¼ tsp ajwain, 1 tsp kasuri methi, 1 tsp ginger paste, 2 tbsp coriander, 2 tbsp mint,½ tsp salt and 2 tbsp oil.

  • mix well making sure all the spices are well combined.

  • further, add 1 cup curd and start to knead the dough.

  • knead to a smooth and soft dough adding curd as required.

  • grease oil and rest the dough for 20 minutes.

  • now pinch a ball sized dough and dust with wheat flour.

  • roll gently to medium thickness.

  • spread ½ tsp oil or ghee and dust with wheat flour.

  • now fold half and spread the oil.

  • fold triangle and press gently without putting much pressure.

  • dust with wheat flour and start to roll gently.

  • roll to triangle paratha or shape of your choice.

  • now on a hot tawa place the rolled paratha and cook for a minute.

  • furthermore, when the base is partly cooked, flip the dahi paratha.

  • also, spread ½ tsp oil /ghee and press slightly both the sides.

  • flip again once or twice till both the sides are cooked properly.

  • finally, serve dahiparathawithraitaandpickle.
